This is a super quick and easy meal to make for dinner or put in the freezer for a make ahead meal for another night. I usually make two containers of 6, one for dinner and one for the freezer for another night. The one pictured below is a mini dish that a friend and I ate to test it out! :)
What you need:
2 - 9x13 baking dish
Flour tortillas (12 depending on how many you prefer)
1 chicken or 4 cans of cubed pre cooked chicken
4 c shredded cheese
2 cans enchilada sauce
1 onion, diced
2 cloves garlic, diced
What I did:
You can buy a rotisserie chicken and cut the meat into cubes, boil a whole chicken or buy pre cooked canned chicken. Whatever your chicken preference is you'll need about 4 cups of cooked chicken.
In a frying pan over medium heat, stir fry the diced onion and garlic until cooked.
Scoop the chicken mixture 1/2 c chicken mixture onto a tortilla, roll up and place into baking dish.

In a large bowl, mix half the onion/garlic, 2 c chicken, 1c cheese, and 1.5 c enchilada sauce.
If you are planning on baking the enchiladas for dinner immediately, pour 1/2 can enchilada sauce onto the bottom.

Scoop the chicken mixture 1/2 c chicken mixture onto a tortilla, roll up and place into baking dish.
Top of with the remaining enchilada sauce and 1 c of cheese.
