Pasta Carbonara


I tried yet another new pasta recipe from food & wine's website tonight called pasta carbonara and it was yummy!  The original recipe can be found here


Ingredients:




















1 pkg trader joe's haufbrau sausages, decased
1 shallot, diced
1 garlic clove, minced
4 mini bell peppers, roughly diced
1 c heavy cream
1/4 c parmigiano reggiano cheese
4 egg yolks
1/4 tsp black pepper

What I did:

 In skillet heat oil and cook decades sausages until just barely done.


Add in shallot, garlic and diced bell peppers.  Cook over medium until bell peppers soften.


Meanwhile, cook linguine pasta until al dente.

Whisk 4 egg yolks in bowl and set aside.

Add cream and simmer until thickened.

Drain pasta and reserve 3 tbsp cooking water.

Mix in creamy sausage/vegetable mixture and egg yolks along with the reserved pasta water.

Add in cheese and stir until evenly coated, top with fresh basil.
