Today we tried roasting red bell peppers and it was actually easier than I originally thought. Just preheat your oven to 300F, wash your red bell peppers and stick them in until roasted black, takes about 10 minutes.
Take them out and peel off the blackened skins then slice up.
Place sliced bell peppers into a bowl. Add 1 tbsp olive oil per red bell pepper, pinch of salt & pepper.
Serve with crackers. Yum!
