Ma Po Tofu

My hubby loves this simple dish. The best part is it can be made in 1 frying pan or wok, takes only 30 mins, and all you need are a few ingredients.

Ingredients:

1 pkg tofu, cubed (I use firm)
1 pkg ground pork
1 jar spicy bean sauce
1/4 c chicken broth
1 clove garlic minced (or 1/2 tbsp garlic powder)
1 tbsp chopped Ginger (or about 1/2 tbsp Ginger powder)
1 green onion sliced (optional)



Cook on medium high heat, add 1 tbsp cooking oil to frying pan or wok
Add in minced garlic, Ginger, and 1/2 of the sliced green onions this will release their flavor
(if not using fresh garlic & ginger then skip this step)
Add in ground pork and stir fry until done (if using garlic & ginger powder add in now along with a dash of pepper if desired)
Toss in cubed tofu then mix in 1/2 jar spicy bean sauce and 1/4 c chicken broth
Simmer on low 5 mins then pour into serving dish and serve with rice, done!
