Easy Cucumber & Red Onion Salad

I was craving something cold and refreshing for lunch today so I chopped up a quick and easy cucumber and red onion salad. 

 
What you'll need:
-chopping board
-1/2 red onion, sliced thinly
-2 cucumbers, sliced thinly
-1/2 c rice vinegar
-2 tbsp sugar
-2 tbsp sesame oil
-salt & pepper

Directions:
In microwave safe bowl mix together rice vinegar, sugar, and sesame oil.  Microwave for 30 seconds and whisk together.  Stir in red onion and cucumbers until coated evenly.  Sprinkle in salt & pepper to taste then refrigerate before serving.  Makes about 4 servings.
