My version of Olive Garden's Zuppa Toscana

We recently went to Olive Garden for an all you can eat soup & salad combo, I'd forgotten how good their soups are.  This week I was craving some soup so I decided I'd try to make their Zuppa Toscana soup at home and it actually turned out really good!


Ingredients:

1 pkg Foster Farms hot & spicy turkey dogs, decased
2 large russet potatoes, halved and sliced thinly
2 c spinach, roughly chopped
1 onion, diced
3 cloves garlic, minced
1 green onion, sliced
2 slices bacon
1/4 c heavy whipping cream
1/4 c low fat milk
4 c water
2 c beef broth
1/4 tsp coarse black pepper

Directions:



Heat stock pot to medium high heat and cook bacon until crispy.  Remove bacon to cutting board.






Add in garlic and onions to stock pot to cook in bacon drippings until soft.





Add in decased hot & spicy turkey sausage and cook until browned, break up into bits.






Add potatoes into meat mixture and brown slightly.






Then add water, beef broth and pepper.  Bring to a boil and cook until potatoes begin to soften.






Stir in cream, milk and green onion.  Return to a boil.




Add in spinach and then serve with some grated Parmesan cheese.
