Easy Twice Baked Potato

Baked potatoes are the best especially when they are stuffed!  I made twice baked potatoes for dinner and not only did my hubby love them but the best part was they were easier to make than I thought. 


Ingredients:

2 large potatoes baked in the oven
2 strips crispy bacon cut into bits
1/4 cup cheese of your choice (I used cheddar)
1/2 cup sour cream
2 tbsp butter
1/4 cup 1% or low fat milk
salt & pepper to taste

Scoup out the baked potatoes into a mixing bowl but be careful and save the skins as they will be used as bowls.
Add all the above ingredients into the mixing bowl with potatoes then mash and mix until desired consistency.  Scoup mixture back into potato skin, top with some cheese if desired and return to oven for 15 mins at 350F.
