Make It Yourself! Breakfast Buritos


If you haven't figured it out, my husbands favorite meal is breakfast.  However, breakfast has to be an on the go type item.  So, here is another one of his favorites....breakfast burritos.  These are a staple in my freezer so I wasn't sure if this should be labeled make it yourself or make ahead since he can buy a delicious breakfast burrito from a mexican restaurants on his way into work but I also stock up my freezer with these.  Oh well, moving onto the good part.

What you need:
Flour tortillas (I used mission burrito sized from Costco so there are 30 in a pack)
Sausage (I used chicken apple sausage from Aidelle - 5 links cut in half lengthwise, then cut in half lengthwise, then sliced small)
2 c cheddar cheese, shredded
1 onion, diced
1 red bell pepper, diced
3 large potatoes, cube small
12 eggs
2 c salsa (I used kirkland organic salsa from costco)
1/2 c milk
1/2 tsp + 1/2 tsp salt
1/4 + 1/4 tsp pepper
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1/2 c water
cooking spray
frying pan
saran wrap
mixing bowls
plate

What I did:


Over medium heat, stir fry chicken apple sausage until slightly browned then place into a bowl and set aside.

In same frying pan, coat with cooking spray and stir fry potatoes.  Add in 1/2 c water and spices (1/2 tsp salt, 1/4 tsp pepper, 1 tsp cumin, 1 tsp chili powder, 1/2 tsp paprika).  Continually stir potatoes until  soft, takes about 20 mins.  Add in diced onion and red bell peppers.  Continue to stir until cooked.  Scoop potato, onion and bell pepper mixture into large bowl and set aside.

In a large bowl crack your eggs.  Whisk in 1/2 c milk then add in 1/2 tsp salt and 1/4 tsp pepper.  In the same frying pan, coat with cooking spray and scramble your eggs.  When eggs are cooked scoop into large bowl and make sure the egg is broken up into small pieces.

Now onto the assembly part.  On your counter you should have a bowl of sausage, a bowl of potatoes/onion/bell pepper, a bowl of eggs, flour tortillas, salsa and shredded cheddar cheese.

Using a soup spoon, spoon out 2 spoonfuls of the potato mixture, 1 spoonful of sausage, 1 spoonful of egg, sprinkle some cheese and a little less than 1 spoonful of salsa. 


Now, just roll it up!  I roll it up by bringing in both sides, flip the bottom towards the top, pull back and then roll it up.  Then I wrap it in saran wrap, place the breakfast burrito into a freezer zip loc bag and store them in the freezer.


Reheat in microwave until warm and enjoy!!
